| | Spiced Caramel & Pepper Makhana | INGREDIENTS 2 cups makhana (fox nuts/lotus seeds) 1 tbsp ghee (or coconut oil for a vegan version) 1½ tbsp jaggery powder (or brown sugar) ½ tsp freshly cracked black pepper ¼ tsp cinnamon powder A pinch of salt Optional: crushed curry leaves or roasted sesame seeds for garnish |
METHOD Heat ghee in a heavy-bottomed pan on low flame. Add makhana and roast for 5–7 minutes until crisp and lightly golden. Remove and set aside.
In the same pan, add jaggery powder and 1 tsp of water. Let it melt and bubble gently till syrupy. Quickly toss in roasted makhana, sprinkle black pepper, cinnamon, and salt. Stir fast so each piece glistens with that pepper-caramel sheen.
Spread on parchment to cool; they’ll turn delightfully crunchy. Sprinkle curry leaves or sesame seeds if you’re feeling extra fancy.
