| | Lemon-Tahini Chickpea Soup |
2 tbsp olive oil (use a good one) 1 small onion, finely diced 2 medium carrots, sliced into thin rounds or half-moons 3 cloves garlic, smashed 1 tsp ground cumin ½ tsp smoked paprika or Aleppo pepper 1 cup chickpeas 4 cups good vegetable broth ¼ cup tahini, well stirred Zest of 1 lemon Juice of ½–1 lemon (to taste) Salt, freshly cracked pepper Optional finishers: chopped parsley or dill, chilli oil, flaky salt |
Soak chickpeas overnight in plenty of cold water (they’ll triple in size). Drain, then boil in fresh water (salted if you like) for 60-75 minutes, until very tender but intact. Drain and set aside. You should have about 2½-3 cups cooked chickpeas. (Shortcut note: If you soak in very hot water for 4–6 hours, you’ll still get excellent results.) Heat olive oil over medium. Add the onion and carrots with a pinch of salt. Cook slowly until the carrots soften and the onion turns translucent —about 8-10 minutes. This sweetness matters. Add garlic, cumin, and paprika; stir until fragrant. Add chickpeas and broth. Bring to a gentle simmer and cook 15-20 minutes, until everything feels cohesive.
Blend about a cup of the soup (or briefly use an immersion blender) and return it to the pot for body without heaviness. Lower the heat. Stir in tahini, lemon zest, and lemon juice gradually, tasting as you go. Adjust salt and pepper.
