| | Shrikhand Parfait with Roasted Fruit & Nut Brittle

Try something seasonal, elegant and apt for this love-meets-transformation week! |
For the shrikhand: 2 cups hung curd (or thick Greek yoghurt) 3 tbsp powdered sugar (adjust to taste) A few strands of saffron, soaked in 1 tbsp warm milk ¼ tsp cardamom powder 1 tsp rosewater or kewra essence
For the roasted fruit:
1 apple or pear (or any seasonal stone fruit), sliced 1 tbsp ghee or butter 1 tsp honey or jaggery syrup Pinch of cinnamon or nutmeg
For the nut brittle: ¼ cup chopped almonds or cashews 2 tbsp sugar ½ tbsp ghee |
1. Whisk hung curd with sugar, saffron milk, cardamom, and rosewater until silken. Chill.
2. In a pan, melt ghee, add fruit slices, and drizzle honey. Let them caramelise slightly and turn golden. 3. Melt sugar with ghee in a small pan until amber. Add nuts, swirl quickly, and pour onto a greased plate to cool. Once hardened, break into shards.
4. In glasses or bowls, layer chilled shrikhand, roasted fruit, and brittle pieces. Finish with a saffron thread and edible petals. |
