Asparagus, Goat Cheese & Lemon Pasta
|
450g spiral pasta (fusilli or gemelli work beautifully)
450g slender asparagus spears, trimmed and cut into 2.5–4cm pieces
60ml olive oil
Zest of 1 lemon, finely grated
2 tsp fresh tarragon, chopped, plus extra to garnish
150g soft fresh goat cheese
Juice of ½–1 lemon, to taste
Sea salt and freshly cracked black pepper

Cook the pasta and asparagus:
Bring a large pot of generously salted water to a boil. Add the pasta and cook until about 3 minutes shy of al dente according to the packet instructions. Add the asparagus and cook together for another 2–3 minutes, until the pasta is tender and the asparagus is bright green with a little bite left.
Before draining, reserve 240ml of pasta water.
Build the sauce:
Meanwhile, in a large serving bowl, combine olive oil, lemon zest, chopped tarragon and goat cheese. Break up the cheese slightly with a spoon.
Bring it together:
Add the hot pasta and asparagus directly into the bowl along with a generous splash of the reserved pasta water. Toss well until the goat cheese melts into a light, silky sauce. Add more pasta water as needed until everything feels glossy and coated.
Season generously with sea salt and black pepper. Finish with lemon juice to taste and scatter over extra tarragon before serving.
