| | For the corn ribs: 2 large corn cobs 2 tbsp oil 1 tsp Kashmiri chilli powder 1 tsp garlic powder (or 1 large clove grated) ½ tsp smoked paprika (optional but delicious) ½ tsp toasted sesame seeds Salt to taste Freshly cracked black pepper
For the sticky chilli glaze: 1 tbsp butter 1 tbsp soy sauce 1 tbsp honey or jaggery syrup 1 tsp chilli flakes 1 tsp finely chopped garlic ½ tsp vinegar or lime juice For the lime yoghurt dip: ½ cup thick dahi / yoghurt Zest of 1 lime 1 tsp lime juice Salt + pepper A pinch of chaat masala |
1. Stand each corn cob vertically and carefully cut down the middle (use a heavy knife). Cut each half into long ribs. Toss ribs in oil, chilli powder, garlic powder, paprika, sesame seeds, salt & pepper. 2. Put the ribs in an air fryer at 200°C for 10–12 minutes or in the oven at 220°C for 18–20 minutes. They should curl up like little riblets and turn golden at the edges.
3. In a small pan, melt butter. Add garlic and sauté briefly. Add soy, honey/jaggery, chilli flakes, vinegar/lime. Reduce slightly until glossy.
4. Coat the hot corn ribs in the glaze. Taste and adjust heat, sweetness, acidity like a true Sagittarian adventurer. 5. For the lime yoghurt dip, whisk the ingredients together till smooth. Taste and adjust seasoning. Serve with the ribs! |
