| | Smoky Tandoori Paneer Wraps with Mint-Lemon Slaw |
200 g paneer, cut into thick strips ½ cup hung curd or Greek yoghurt 1 tbsp mustard oil 1 tsp Kashmiri chilli powder ½ tsp cumin powder ½ tsp garam masala Juice of ½ lemon Salt to taste 4 whole-wheat rotis or tortillas For the Mint-Lemon Slaw
1 cup shredded cabbage ½ cup grated carrot 1 tbsp chopped mint 2 tbsp yoghurt 1 tbsp lemon juice Pinch of sugar, salt and pepper To serve
Onion rings A drizzle of green chutney or smoky aioli |
Mix yoghurt, oil, spices, lemon juice, and salt. Add paneer, coat well, and let rest 15 min.
Cook paneer on a grill pan or tawa until lightly charred on both sides. Combine cabbage, carrot, and mint. Whisk yoghurt, lemon juice, sugar, salt, and pepper; toss through. Warm rotis, layer slaw, paneer, and onion rings. Roll tight, slice in half, and drizzle chutney. |
