| | Eclipse Lentil Stew with Moonlit Yoghurt Swirl

1 cup red lentils, rinsed 1 tbsp olive oil 1 onion, finely chopped 2 garlic cloves, minced 1 inch ginger, grated 1 carrot, diced 1 tsp cumin seeds ½ tsp turmeric 1 tsp smoked paprika 1 can chopped tomatoes (400 g) 3 cups vegetable stock Salt & pepper, to taste ½ cup Greek yoghurt (or coconut yoghurt for vegan) Fresh coriander leaves, for garnish Optional: edible flower petals for a celestial touch |
Heat olive oil in a pot. Sauté onion, garlic, and ginger until golden.
Add cumin, turmeric, paprika, and carrot. Stir until fragrant.
Pour in lentils, tomatoes, and stock. Simmer 20–25 mins until lentils are tender. Adjust seasoning. Ladle into bowls.
Using a spoon, swirl yoghurt on top in a spiral — a “lunar eclipse” against the stew’s fiery red.
Scatter coriander and, if you’re feeling extra, edible petals like marigold or viola. |
