Spiced applesauce and cottage cheese parfaits with granola
I like that this recipe can almost entirely be homemade (at least in my mom's kitchen) if you're up for the challenge. She would always make and freeze large batches of applesauce with apples from the orchard, and she loved to buy oats in bulk to make her own granola.
If you're not up for the hassle of from-scratch cooking, you can always get the same products from the store. Just look for low sugar, sugar-free, or unsweetened varieties since applesauce and granola often contain added sugars.
Cottage cheese is also supposedly making a "comeback." I don't know why it was ever considered "out" in the first place, as I grew up with this refrigerator staple!
For those of you jumping on the cottage cheese bandwagon, it might be good to know that it's high in protein and low in calories. On the flip side, it can be high in sodium, unless you opt for a low sodium version.
These ingredients make for a sweet and satisfying breakfast you can throw together in a minute or less — with a whopping 31 grams of protein per serving.
