| | Creamy Butter Beans in Lemon Tomato Herb Sauce |
2 cups fresh butter beans (shelled) (also known as fresh lima beans/safed sem/vaal) 1 tablespoon olive oil 3 garlic cloves, minced ¼ teaspoon red pepper flakes ¾ cup sun-dried tomatoes, drained and roughly chopped 2 cups vegetable broth 1 cup heavy cream 1 cup freshly grated parmesan ½ tablespoon dried oregano ½ teaspoon salt (adjust to taste) 1 cup fresh spinach 2 tablespoons fresh basil, chopped 2 tablespoons lemon juice 1 teaspoon lemon zest Salt to taste |
If using freshly shelled butter beans, rinse thoroughly. Bring a pot of salted water to a boil. Add beans and cook for 20-25 minutes until tender but not mushy. Drain and set aside.
Tip: Fresh beans should be soft and creamy inside but still hold their shape. Heat olive oil in a large skillet over medium-low heat. Add garlic and red pepper flakes. Sauté for about 30 seconds until fragrant — do not brown.
Add sun-dried tomatoes, oregano, salt, and vegetable broth. Bring to a gentle simmer and cook for 2-3 minutes. Reduce the heat to low and slowly stir in the heavy cream. Add parmesan and stir until melted and silky.
Tip: Keep the heat low once the cream is added. Avoid boiling. Fold in the cooked butter beans and spinach. Cook on medium heat for 2-3 minutes until spinach wilts and beans are coated in sauce.
