Recipe of the Week
Shakshuka with creamy avocado slices
This recipe has all the key ingredients: eggs (of course), tomatoes, and aromatics.
The "twist" here is that you have the option to add chickpeas to your pan. These beans are excellent sources of fiber and protein and provide a unique spin on this classic dish. The rest of the ingredients are pretty par for the course, though I would choose peeled whole tomatoes instead of diced. I like breaking them with my hands and eating larger chunks.
Whenever I make a shakshuka at home, I fry my bread in olive oil for a crunchy, greasy texture. It's an extra step, but it is so worth it. Try it yourself and then let me know I was right. 😜
